The oyster bar is literally and figuratively the center of St. Roch Market on St. Claude Avenue, just minutes from the French Quarter. Chef David "Tyger" Hale brings 24 years of executive chef experience and a lifetime of family recipes to Salted Pearl, serving fresh-shucked Louisiana oysters sourced from a fourth-generation oyster farm just 30 minutes down the road in St. Bernard Parish. Raw, charbroiled, or Rockefeller, plus Gulf seafood entrees, beer on tap, and wine. Happy Hour oysters every weekday, 3–5pm.

Meet Chef Tyger
Before he was behind the oyster bar at St. Roch Market, Chef David "Tyger" Hale spent nearly a decade as a professional horse jockey, racing over 1,100 times across Louisiana tracks. When an injury ended his racing career, he turned to the kitchen, bringing the same intensity and precision to cooking that he'd brought to the track.
With 24 years as an executive chef across New Orleans, Tyger now runs Salted Pearl with a menu built on family recipes and locally sourced Gulf seafood. His BBQ Shrimp, based on his mother's recipe, has become one of the most talked-about dishes in the market. The Tomato Shrimp & Crab Napoleon Salad is a dish he perfected over years of chef interviews and tastings but never had the chance to put on a menu until now.
Every dish at Salted Pearl uses seafood sourced from a fourth-generation oyster farm in St. Bernard Parish, just 30 minutes from the market. The oysters arrive fresh daily, plump, sweet, and shucked to order. As Tyger puts it: "Every dish has a story."
